Rob's Signature Flapjacks


350g Oats
250g Butter
25g Sweetened desiccated coconut
125g Caster sugar
125g Golden syrup (bottle not tin!)
3-4pcs common or garden fudge
1 bar Chocolate topping (not chocolate flavoured)

Put the butter, sugar, fudge and syrup in a saucepan and heat until melted. Meanwhile weigh out the oats and coconut. When the butter mixture has melted remove from the heat and mix in the oats and coconut.

Cook at 170C for 20-25 minutes, or until the mixture starts to golden at the edges. With these flapjacks undercooked is always better than overcooked in my opinion.

Allow to cool and top with the melted chocolate.

The coconut in this is not particularly noticeable, but it does make the flapjacks moist. If you like coconut you could add more to the mix and / or sprinkle some on the melted chocolate before it sets.
